After much encouragement from family and friends, Cookie Casa is finally off and running! For several years, Erin H. Zabel, owner and founder of Cookie Casa, thought about the prospect of having her own baking business. Ever since childhood, Erin has taken a keen interest in the world of baking. Cookies, in particular, are a staple at family gatherings (thanks to her grandmother Becky’s fine baking skills and her grandfather Fernando’s willingness to sample everything). This family interest in baking goes all the way back to Erin ’s great grandmother from Spain (Mama Herrero), who is responsible for our famous holiday season cookie, the rosco (tender Spanish cookies rolled in cinnamon and sugar).

And the name of the company? Well, let’s say it’s not only in honor of Mama Herrero’s
heritage, but also the homemade quality of Cookie Casa’s baked goods. They have the
taste and aroma of fresh cookies right out of the oven in your very own casa.
